Smoked Sausage and Potato Hash

What do you do when you forget to put something in the refrigerator to thaw for dinner? Often times, for me, I look to make something using a rope of smoked sausage – such was the case this evening.

I like to have a rope of smoked sausage on hand for evenings just like this. I’ve used it to make a delicious sausage, broccoli and red pepper pasta using this sausage. I thought of doing another pasta, but decided that I’d do a potato hash, instead.

I started by dicing 5-6 red potatoes.

In addition to the potatoes, I sliced the sausage and 2 onions.

I sprayed the hot wok (I used my wok because it is big and cast iron) with avocado oil, and added in the onions and the seasonings. After cooking a few minutes, I also added in the garlic.

After the onions have started to soften, add in the potatoes and sausage – add one at a time, allowing each to get a little brown (if you use a hot cast iron skillet or wok, this will be easy!).

After the potatoes and sausage get a little brown, pour in the water – stir through and cover. Stir occasionally to keep the potatoes from sticking.

Once the potatoes have softened, you’re good to go!

Smoked Sausage and Potato Hash

1 rope of smoked sausage, sliced
5-6 red potatoes, diced
2 onions, sliced thin
1 tbsp minced garlic
1 tbsp Cavender’s Greek Seasoning
1 tsp dried parsley
1 tsp black pepper
1 tsp salt
1 cup water
Avocado oil spray

  • Dice potatoes
  • Slice smoked sausage
  • Slice onions
  • Add avocado oil to a large skillet or wok
  • Add in onions and seasonings and cook until the onions start to soften
  • Add in the garlic and cook for 3-5 min
  • Add in the potatoes and, finally, the sausage
  • After allowing the sausage and vegetables to get a little brown, add in the cup of water
  • Cover skillet and cook until potatoes are done (stir occasionally)

Smokey Jalapeno Wontons

I’ve talked about the Alouette Smokey Jalapeno cheese before – I used it when I made shrimp and grits, using it. This stuff is good!

I was looking for something quick, and kind of snacky (Is that a word? If it isn’t, it should be!), for lunch. I decided to use some of the wontons I had on hand and I had just picked up some of the Alouette Smokey Jalapeno cheese – it seemed like a match made in heaven.

I was just making these for me, for lunch – but, they would make a perfect appetizer, if you wanted to make a bunch of them. I decided to make 6 wontons (but accidentally took 7 out of the pack – 7 it is!).

I put about a tsp of the cheese in each wonton.

I wasn’t quite sure how to close them up – the first one, I just folded over into a triangle, but wasn’t quite sold on it. Then I decided to pinch the corners together, kind of like crab rangoon appetizers that I’ve had at Chinese restaurants. To close them up, just put a little bit of water where I was punching the wontons together.

I could have fried them – but, I decided to do them in the oven. In order to make them a little crispy, I did spray them with avocado spray.

I baked them in a 400 degree oven, for 15 minutes, on parchment paper. They were perfectly crispy!

Even the bottom of them were browned, since my avocado spray went on a little heavier than intended and I made sure to rub the wontons on the overspray – getting avocado oil on the bottom.

This was super easy – and now I want to do it with different Alouette cheeses!!

Easy Asparagus

Asparagus has to be one of our favorite side dishes. And this is a super easy and tasty way of making it.

Just cut the ends of of your asparagus and arrange on a sheet pan (I line mine with foil for easy clean up).

Spray with oil of your choice (I use avocado oil) and top with seasonings of your choice (I use Trader Joe’s Everything but the Bagel seasoning). Sprinkle on a little parmesan cheese and bake in the oven (at 400 degrees) for 20-25 minutes.
